By Laura Smythe – Reporter, Philadelphia Business Journal Nov 3, 2020, 6:00am EST

Conshohocken-based fast-casual chain Saladworks is setting its sights on franchise expansion in its core markets of Greater Philadelphia and New Jersey as the company continues to open locations despite Covid-19.

Saladworks, which was founded more than 30 years ago in Cherry Hill, is aiming to launch between 15 and 20 new franchises in the region over the next nine months, Vice President of Franchise Development Eric Lavinder told the Business Journal. The brand is particularly eyeing New Jersey locales including Phillipsburg, Flemington, Ewing Township, Princeton, South Brunswick, Burlington Township and East Windsor, and the Pennsylvania towns of Trexlertown, Quakertown, Royersford, Fort Washington, Media and Springfield.

The national chain, which has upwards of 100 locations, has already debuted 28 new stores in 2020 with a few more slated to open. More than 20 new deals are in the pipeline for 2021. This week Saladworks also opens its first location in Canada, which will operate as a ghost kitchen, meaning it will exclusively offer takeout and delivery. Saladworks has 10 stores scheduled to launch in Canada this year, Lavinder said.

The company decided to refocus on its home markets when the Covid-19 pandemic pressed pause on travel, effectively thwarting tourists from coming into Greater Philadelphia and becoming newly acquainted with the brand, Lavinder noted. Saladworks locations are concentrated in Pennsylvania, New York, New Jersey, Maryland and Delaware.

Saladworks found a “silver lining” in going back to its roots and focusing on further growing brand awareness in the region, he said. With uncertainty around when office workers will be returning to work in the city, Saladworks is honing in on more suburban markets.

“We haven’t sold out our core market,” Lavinder said. “That is a huge missed opportunity for the growth of the brand.”

Saladworks has been “very lucky” in weathering the coronavirus storm, he said, because it falls into a niche that is “the right concept at the right time.” The fast-casual chain is not full-service and didn’t heavily rely on indoor dining pre-Covid. The food also travels well, Lavinder said, and falls under the healthy food umbrella, which he characterizes as “a huge growth category in the marketplace.”

Before the pandemic hit, third-party delivery and online takeout ordering were already substantial revenue drivers for the company, according to Lavinder. Only about 35% to 40% of customers were actually eating in stores, so Covid-19 dining capacity restrictions didn’t change much, or guests elected to order food via the digital channels.

About 80% of the company’s locations remained open when Covid-19 hit, though some operated in a limited or online-only capacity. Now nearly all of the stores are back open, Lavinder said, except for a small number in “captive audience locations” such as malls or airports.

The cost of operating a single Saladworks restaurant ranges from $210,607 to $534,084, according to the company’s website. The initial franchise fee for a single location is $35,000.

When asked about potential franchisees being wary of entering the hospitality industry during the public health crisis, Lavinder recommended they evaluate the need for the product, consider the strength of the brand and food niche, and determine how the company aligns with their own morals, goals and preferred food type. On a larger scale, he noted he’s optimistic about the company’s future as he anticipates the restaurant sector to rebound “stronger than ever” once the pandemic subsides.

“When you come back out of the stay-at-home we’ve been doing, there’s less restaurants, less choices … than there was before,” Lavinder said. “That only puts in more demand for products that are actually open.”

As Saladworks continues to develop its franchise arm, the brand seeks to diversify its locations by opening ghost kitchens as well as shops within grocery stores or at universities and military bases.

The company is particularly noticing demand in the grocery store segment, Lavinder said, as many grocery stores are looking to provide a healthy grab-and-go option. During Covid, that demand has only increased as many grocery stores had to close down their own salad bars under coronavirus guidelines.

I recently went one on one with Marcus Burley. Marcus is a former NFL cornerback who played the Jaguars, Seahawks, Browns and Texans and is now a Saladworks franchisee.

Adam: Thanks again for taking the time to share your advice. First things first, though, I am sure readers would love to learn more about you. First things first, though, what is something about you that your fans of yours don’t know?

Marcus: I am a very driven and passionate person. When I put my mind to accomplishing something, I don’t stop until I achieve the goal. I believe that this trait directly correlates to the success that I’ve had, ultimately placing me where I am today.

Adam: What inspired your drive to run a business? How has your experience playing football translated to your experience running fitness franchises?

Marcus: My inspiration to run my own business started with the idea and vision of ownership. I always had the desire to own my own and with the shift to healthy eating becoming more popular, I felt the best time to invest in Saladworks is right now. My experience with the NFL definitely translates to the healthy eating that Saladworks offers. My lifestyle as an athlete required daily consumption of healthy options to ensure the ability to perform at a high level.

Adam: What experiences, setbacks or challenges have been most instrumental to your development and success as a football player and as an entrepreneur?

Marcus: I would say the daily grind of an athlete is very similar to an entrepreneur. Every day is different and has it’s different challenges. Operating a business and performing as a professional athlete usually comes with a lot of unknowns. You have to become comfortable with believing even when you can’t quite see it. Perseverance is key.

Adam: What players and coaches did you enjoy playing with and for the most and why? What are the characteristics of a great coach and a great teammate?

Marcus: I often refer to my time in Seattle when asked this question. I had the amazing opportunity to play as a member of the Legion of Boom in Seattle. Not only were we a top 5 defense of all time but I developed lifelong relationships with some of the best guys to ever play the game. Guys like Kam Chancellor, Richard Sherman and Earl Thomas. I enjoyed playing with those guys so much because they demonstrated how to prepare yourself to perform at a high level. Great coaches and teammates create an environment where everyone teaches the next person so there are no weak links. Seattle Seahawks and Pete Carroll are the best at doing that.

Adam: In your experience, what are the defining qualities of an effective leader? How can leaders and aspiring leaders take their leadership skills to the next level?

Marcus: I believe the best qualities of a leader are leading by example and being able to relate to everyone. People are motivated in different ways and the best leaders find a way to connect to everyone and bring the best out of everyone that they are around.

Adam: What are the best lessons you have learned through your career in sports that are applicable to those of us who will never earn a living playing pro ball?

Marcus: One lesson that I’ve learned from sports is to always play the game like it’s your last opportunity to ever play again. Leave it all out there so when the time comes that you don’t have the opportunity to further pursue your athletic career, you have no regrets. My dad instilled that in me while playing little league sports at a young age.

Adam: What is the most surprising thing about life in professional sports? What is something that would shock fans?

Marcus: I believe the biggest shocker to fans is that professional sports feel the same as little league and high school sports when you’re out there playing. It’s still the same game.

Adam: What are the best lessons you learned from your time as an entrepreneur?

Marcus: A lesson that I have as an entrepreneur is to trust the timing of things. You may want to rush things but everything happens for a reason. Trust the timing of everything.

Adam: What is the single best piece of advice you have ever received?

Marcus: I have fortunately been on the receiving end of a lot of great advice from wise individuals. One point that comes to mind would be to always trust and enjoy the process. Enjoy taking the steps that are required to reach your goal.

Deal Brings Fast-Casual Salad Concept to 17 REEF Hubs in 10 Cities across the United States

May 19, 2020 // Franchising.com // WEST CONSHOHOCKEN, Pa. – Saladworks, the nation’s leading fast-casual create-your-own salad concept, announced today it has launched a partnership with REEF Technology, a Miami-based company that transforms parking lots and facilities into mobile ecosystems that seamlessly integrate a broad range of businesses. The partnership expands Saladworks’ footprint into 17 REEF hubs throughout 10 cities across the U.S., including Miami, Atlanta, Houston, Austin, Dallas, Chicago, New York, Nashville, San Francisco and Los Angeles, and will primarily debut as ghost kitchens supported by third-party delivery companies nationwide. The first one opened in Philadelphia yesterday, with Miami to follow next week, and the rest throughout June.

While some of its REEF locations allow for walk-up orders, Saladworks will primarily use these mobile ecosystems as a means to accommodate a larger number and wider area of delivery orders. The centralized locations and ability to prepare food on-site promote the delivery of meals as efficiently and freshly as possible. Each site offers a menu of featured items, including Saladworks’ create-your-own and signature salads, wraps and grain bowls.

“We strive to be original in everything we do, and that originality is exemplified by exciting, strategic projects like this partnership with REEF Technology,” said Kelly Roddy, CEO of Saladworks. “Among our many creative channels of growth, these mobile ecosystems enable us to share our healthy, sustainable and incredible brand with guests we might not have otherwise reached.”

Saladworks, which has been in business for more than 30 years, has always placed a focus on guest originality through its healthy and fresh ingredients and create-your-own options. Ranked number 22 among this year’s Top 100 Fast Casual Movers and Shakers, the brand is currently experiencing impressive growth due to a rise in health-conscious consumer behaviors and its unique avenues for expansion, such as ghost kitchens, stores within stores, and locations across the likes of universities and military bases. By the end of 2020, Saladworks plans to open 30 new restaurants and have 50 more in development.

“In this age of social distancing, consumers are leaning on delivery and minimal-contact options now more than ever,” said Roddy. “These mobile ecosystems allow us to meet those needs and scale the Saladworks concept quickly, efficiently and for a fraction of the cost, which is a win-win for everybody.”

About Saladworks

Founded in 1986, Saladworks is the nation’s leading fast-casual create-your-own salad destinations. Since franchising in 2001, the brand has grown to over 100 locations across 18 states and two countries. Saladworks guests can enjoy made-to-order salads from the freshest vegetables, fruits, proteins and delicious dressings, together with a selection of freshly-made wraps, grain bowls, and other menu items. From 2017 to 2019, Saladworks ranked on the Franchise Times Top 200, and in 2018 and 2019, Saladworks landed on Entrepreneur Magazine’s Top 200 Food and Restaurant Franchises List.

WEST CONSHOHOCKEN, Pa., July 21, 2020 /PRNewswire/ — Saladworks, the nation’s leading fast-casual create-your-own salad concept, has grown by 22 restaurant locations thus far in 2020. Fueling this growth, Saladworks is not only entering traditional restaurant franchises, but it is also expanding into non-traditional retail presences such as a store-within-a-store, universities, ghost kitchens and Military bases. It’s also using REEF Technology, primarily as mobile ecosystems, as a means to accommodate a larger number and wider area of delivery orders.

“In addition to continuing to build our traditional restaurant growth, Saladworks is looking to redefine the non-traditional restaurant category in unique and relevant platforms – diversifying our portfolio to give guests what, how and where they want it,” said Eric Lavinder, VP of Development for Saladworks. “Among our many creative channels of growth, we’re enabled to share our healthy, sustainable and incredible brand with guests we might not have otherwise reached.”

In terms of the store-within-a-store concept, Saladworks is pursuing more grocery opportunities in Delaware, Maryland, New York and nationally. It’s estimating a dozen or more additional openings within grocery chains before end of year and already has two slated in 2021. Saladworks is fielding inquiries from grocery chains around the country to continue fulfilling the need for customizable, personalized salads, bowls, wraps and sandwiches.

Among the 22 locations that have opened in 2020, one-third have been new traditional restaurants. Half of these are local Mid-Atlantic core growth, while the other half aims to bring healthy food to new markets such as Tennessee, Rhode Island and Indiana – all of which have opened their first Saladworks locations this year. Opening second half 2020 and currently under construction includes more local and far-reaching growth such as Philadelphia, New Jersey, North Carolina and California. On the docket for next year to start off 2021 strong includes Massachusetts, Nevada, several more California restaurants and more to come. The company is building a large pipeline now in the second half of 2020 to begin 2021 robustly with a large quantity of franchisees to open.

Part of Saladworks growth plan involves higher-ed campuses. As part of an Aramark retail dining partnership, Saladworks will become a new on-campus restaurant offering at Purdue University in West Lafayette, Indiana. Opening in August, not only is Aramark having success with the brand, but Saladworks was also selected to be in other major universities across the country, with construction to initiate in late 2020 or early 2021. This will entail at least several more educational centers to open Saladworks restaurants.

Also, initially executed in January 2020, Saladworks is entering the buildout phase to open at multiple US Air Force Services in Arizona, Colorado and California. Saladworks also has other deals in place with multiple service-personnel institutions to provide healthy food to more bases across the country.

Saladworks is also expanding its portfolio via shared virtual kitchen space, forging a partnership with Ghost Kitchen Brands (GKB) in Canada. GKB operates numerous international brands in each kitchen. This allows customers to order products from multiple international branded menus all at one time (either in person or via third party delivery), for the best customer experience including saving delivery fees. No other virtual kitchen model works this way. With more than 20 kitchens operating in Canada and the US, GKB is poised to expand to open over 100 kitchens in the next 8 months. The first kitchen featuring Saladworks will launch in Mississauga ON in August, and from there into all new kitchen openings nationally.

“Saladworks is a perfect fit into our international brand portfolio. We are always looking for fresh, healthy and innovative options, and our customers will love the Saladworks menu. We appreciate that the corporate team understands our business and has been flexible to balance all our needs,” said Marc Choy, President of GKB. “I look at this as the first step in a long-term partnership with explosive growth in Canada and our international markets.”

Saladworks, which has been in business for more than 30 years, has always placed a focus on guest originality through its healthy and fresh ingredients and create-your-own options. Ranked number 22 among this year’s Top 100 Fast Casual Movers and Shakers, the brand is currently experiencing impressive growth due to a rise in health-conscious consumer behaviors and its unique avenues for expansion.

I had always been up and down where my weight was concerned, but I knew then that what I was doing was not what was best for my family.”

Santarlas began a lengthy journey, starting with gastric sleeve surgery, a bariatric procedure that removes 75-80% of the stomach, in 2014. The Prospect Park, Pennsylvania dad lost approximately 130 pounds as a result of the surgery, but found himself at a plateau, unable to lose additional weight and still at nearly 350 pounds.

When Santarlas realized that focusing on his body’s nutritional needs improved his energy levels, he began experimenting with foods that helped him feel energetic and satisfied, landing on a lunch time salad as his preferred way to get vegetables, nutrients and protein into his body.

“My focus was really knowing that what I was putting into my body was 100% what my body needed to sustain itself,” Santarlas explained. “I looked at different restaurants where I could grab a salad easily on my lunch break and felt that Saladworks had a good reputation from the stand point of what they offered as ingredients.”

For the last six months, Santarlas has eaten a salad almost daily, while maintaining his routine of having shakes, smoothies and protein bars throughout the day.

“I try to stay under 200 calories for snacks, but with at least 15 grams of protein,” said Santarlas.

After adding a daily salad break into his routine, Santarlas lost nearly 40 additional pounds, bringing his weight-loss total to 266 pounds.

Santarlas’ favorite salad order is one that’s simple to make at home and starts with finding a good balance between nutrient-dense vegetables and heathy proteins.

“For me, I like the spring mix because it has a mixture of everything and has high vitamins in it, whereas if you do a romaine lettuce, it really doesn’t have as many nutrients in it,” said Santarlas. “Then mix in proteins like chicken and turkey because they’re low-calorie but high-protein.”

“I always add a raspberry vinaigrette because it gives it a lot of flavor and it’s low-calorie,” he continued. “You could also throw in broccoli or carrots, but that’s up to you. And, I like a little bit of pecans and raspberries and goat cheese: That’s my go-to salad.”

Johnson City resident Diane Taveau is bringing Philadelphia-based Saladworks to Tennessee marking the brands entrance into the state. She has signed a 3-unit deal for the Tri-City region (Bristol, Johnson City and Kingsport). Diane was a frequent visitor at Saladworks when she was living in Philadelphia. Her first location in Johnson City plans to open by October 2020.

“What excites us about Diane’s investment and growth plan is that, increasingly, there’ll be more options for consumers in these markets, starting with Johnson City, to be able to go get a healthy alternative,” said Patrick Sugrue, president and CEO of Saladworks.
